All but, transfer files, video chat, site notifications, and applications.
General settings-

Only enable AM/PM Time Format, Admins can view everybody, enable full names.

Do not enable Guest to talk.

Applications-

None. They should be disabled. For good measure; disable show applications to guest and disable applications menu.

Chat Rooms-

General is where everybody will talk. Password will be given to trusted members and staff. Admin will be given to only administrators.

Install the theme I recommended in the "Actual Forum Suggestions" thread.
