Diesel Racer

I have made an Android game called Diesel Racer.
It's a racing game with motion control for steering, random road and AI opponent cars.
It's a pretty basic game it doesn't even have a menu and I want to turn it into a "proper" game and also port it to OUYA.

My question is where I should take it from here? Since gameplay is a bit lacking.
You basically start the race with two AI opponents and then you race till the end of a random non circular track.
If you reach first you win, if you don't you lose.
There are turns and drops and ramps but that is the basics of the game.
The issues with this is if you get ahead of the opponents you are kind of alone on the track since they are behind.
The same if they get ahead of you.
How would you make this game more interesting?
Adding enemies popping in the middle of the race?
Make the track circular?
I also had shooting and making it a violent race in mind.
Please tell me what you think.

But should I make the track circular? How many enemies?

I think make specific tracks, I've never been a fan of everything been random or neverending.
Make 3 tracks each with a specific feel like city, countryside, desert for example.
If you dont have sliding in the game that would be cool to add in. 4 opponents minimum if you can.
Hope that gives you something to play with.

I like 6-8 opponents in games like this. It would be nice with three different modes: Pure racing, racing with boost, battle racing with the works. And of course some online leaderboards for best time / most damage :)
